Peanut Butter Chocolate Spiced Truffle with Coconut

Yesterday I was looking for a recipe to make Nutty Balls – yes that’s what it’s called – no matter how you say it, it always injects a laugh.  I have to admit my recipe name is less embarrassing.  Since I couldn’t find the original recipe I quickly came up with one that I enjoy even more because it’s got creamy peanut butter! From start to finish this took under 30 minutes including rolling time.

Food processor a must
No baking required
Healthy treat

Makes 20-25 truffles

1 ½ cup raw unsalted walnuts
1 cup unsweetened cacao 
½ cup shredded unsweetened coconut
¼ cup + 2 Tbsp creamy unsalted peanut butter
4-5 Tbsp pure maple syrup
1 tsp cinnamon
1/4 tsp allspice
1/4 tsp ginger powder (optional)

1. Add the walnuts to food processor and pulse until the nuts become fine. Do not over process.
2. Add the coconut, peanut butter, cinnamon and allspice and mix, Add the maple syrup while it is mixing and continue mixing for another minute. The mixture should look soft.
If you can easily form a ball then it’s done.

Form into small balls and coat them with coconut or sprinkle cacao. Put them on a plate and in the freezer for 1 hour to firm up. Take them out of the freezer and store in fridge. Good for one week.
