Warm Rolled Oat Cereal with Wheat Germ, Nuts, Currants & Banana
Of the four seasons winter is the only time I like to cook rolled oats otherwise I soak them and eat raw with almond milk, nuts and currants but today it’s snowing and warm oatmeal sounds perfect. My longtime boyfriend Jeff and I have been spending the week in the country celebrating the holidays and catching up with house projects. Jeff built a beautiful harvest table a couple of years ago and this week he finally built two bench chairs to go with it which look a lot better than the ice cream parlor chairs we’ve been using. We also added a wood - burning stove last year ( a slightly big project) and yesterday spent half the day stacking dry wood for the winter – you would be amazed at how fast a 5ftx8ft cord of wood can burn. Luckily we finished in time before the big snow- storm we are having today. When I’m in the country all I want to do is be in the kitchen – maybe it’s the floor plan (truth is I just want to eat and play in the kitchen) I feel less confined than I do in the city. Here I can look out the window to the back yard and see out to the living room and talk with anyone who visits. I definitely feel more a part of what’s going on that just the happenings in the kitchen.
Today I was in the mood for rolled oats similar to my raw oats excepts this one is warm and has the addition of raw wheat germ which is loaded with nutrients such as potassium, iron, calcium, zinc, magnesium, vitamins A,E,B1 and B3, and high in protein.
Wheat Germ Definition - is the edible part of the wheat kernel removed during wheat processing the appearance is golden and flakey.
1 cup rolled oats
16 oz non dairy milk – I used almond
4 Tbsp raw wheat germ
Add rolled oats to medium sauce pan and add the non dairy milk. Cook on medium heat for 10 minutes stirring occasionally and try to prevent boiling.
When done serve in 2 bowls and spoon in 2 tbsp of wheat germ into each bowl and mix well, (optional add 1 tbsp of more milk to oatmeal) add your choice of nuts, currants, seeds and fruit.
I used sliced almonds, dates, banana, and topped with maple syrup.
