Monday's Easy Lunch - Kale and Avocado Salad

Super simple kale salad for lunch today with just a squeeze of lime juice and lemon zest, avocado, clover sprouts, pumpkin seeds, and sliced radish with a pinch of sea salt. I put this together in 3 minutes and it's packed with nutrition. I eat salad nearly everyday it's always a little different and yummy dressings can really jazz it up. The lime juice and sea salt was perfect here.

I keep a container of sqeeezed limes and lemons in the fridge saving them for their zest which I like to add to salads, desserts, and dips - only if they are organic without the pesticides.

You can easily take this to work for lunch, this kind of eating during the day will keep up your energy.
