Sweet Roasted Radish

Sweet Roasted Radish
I’ve not had radishes roasted I mostly eat them raw like popcorn with a little sea salt and even juiced with my carrots and an apple. In a spontaneous mood today I felt like roasting them with a little coconut oil, maple syrup and sea salt – simple and flavorful. The radishes pictured below I ate in one minute. I especially love the little crunch.

Pre heat oven to 400
20-25 minutes

I used about 6 radishes which was all I had – use more
1 tsp coconut oil - or olive oil
1 tbsp maple syrup
pinch sea salt

rub the radishes with the above and sprinkle with a pinch of sea salt and bake them on baking sheet with parchment paper

if doubling the radishes – double the recipe

eat them as is or as a side dish!
