Petite Purple Onions Roasted with Maple Glaze
I typically don’t post two recipes in one day but what the heck we’ll end the week on a sweet and savory note.
This simple recipe is similar to my roasted radishes except for the addition of paprika. The onions have a sweet, salty thing going on, I just love that combination. The onions would make a great topping to salad, grains or pasta, or just to snack on as I did the first time I made them, though you may need a peppermint afterward:)

18 small red onions skins peeled – they came in a bag
2 tsp extra virgin olive oil or raw coconut oil
1 ½ Tbsp pure maple syrup
sea salt two pinches
parsley or any herb choice chopped - optional
Pre heat oven to 400 degrees.
In large bowl add the peeled onions, massage the oil into the onions with clean hands, add the sea salt, maple syrup and stir with large spoon. Place the onions on parchment lined baking sheet and sprinkle with paprika. Bake at 400 for 13-15 minutes. Sprinkle with chopped herb after roasting.
You can double the recipe for more onions.
