Spicy Spicy Pumpkin Seeds with Lime & Sea Salt
Kick, tang and salt are such a great combo and these fiery pumpkin seeds make for a fun snack or topping. Jeff and I devoured these in minutes. I’ll be sure to double the recipe next time. I also think this makes a great gift.
Before putting pepitas in oven be sure to taste one after seasoning to ensure there’s enough kick and salt. Add a pinch or two more if needed.

½ cup raw unsalted pumpkin seeds
1/8 tsp + 3 shakes chipotle or cayenne powder – taste for heat
1 ½  tsp olive oil
1 tbsp + 1 tsp lime juice
¼ tsp sea salt + pinch after toasted

Pre heat oven to 375 with rack in the middle
Line baking sheet with parchment paper

1 Add pepits, lime juice and olive oil to medium bowl and toss until well coated. Add the sea salt and chipotle pepper and toss well. transfer to the parchment lined baking sheet in a single layer and bake for 5 minutes, toss the pumpkin seeds and bake 1 more minute they should look toasted.
