Rolled Oats & Banana Breakfast Soft Serve
Weekend breakfast? I think so. I love this variation of using banana with rolled oats except this one uses frozen banana combined with peanut butter as soft serve - served on the side of soaked or cooked rolled oats adds a fun and exciting twist. This would also be great with a whole grain such as oat groats, barley, farro or spelt. I especially love when the ice cream starts to melt into the oats.

Banana Soft Serve
3 portions
Ingredients
2  sliced bananas frozen overnight
2 tbsp creamy peanut butter or almond
Chopped pecans
1 tbsp pure maple syrup
Blueberries or other berry
Coconut butter
Dates medjool or deglet
Raw soaked oats or cooked


Combine the frozen banana slices and peanut butter in food processer until smooth and chunky, stop to scrape sides and repeat again. Mine is chunky with bits of banana.

Plating
Add your oats to a bowl, add banana and the toppings mentioned above. Total deliciousness.
