Monday Weekly Highlights - Simple Delightful Breakfasts

I remember the days when breakfast at home, especially during the week was a rotation of eggs and a bagel with cream cheese and tomato, eating out was usually the same, eggs elevated to one with hollandaise sauce or a crepe with gruyere cheese, but having given up those things, I’ve introduced a wide variety of flavors and foods to brighten any day of the week and with little effort.
With a busy workweek, I like to keep my mornings lite saving the occasional pancake or crepe for a lazy weekend. On hand, I always have fruit, nuts, and seeds to make my breakfast interesting. So here are a few of the simple yet delightful breakfasts I eat to start my day, again these are inspirations to add to your day.

The above breakfast was a quick whip up in the blender.  I love the creamy with salty crunch of nuts and coolness of mint.

Serves 1
1 banana
3 large frozen strawberries
½ cup non dairy milk – I use So Delicious
¼ avocado
1 tbsp pure maple syrup
chopped fresh mint

Combine all in a blender and top with nuts, I used pistachio, fresh mint, unsweetened shredded coconut, fresh ground cinnamon and more fresh berries, serve in a pretty cup.

The below breakfast looks complicated but was very simple to put together. I used left over quinoa, and a 3 inch biscuit cutter to mold the grain. I then topped it with fresh fruit such as raspberries and blueberries, pistachio, coconut butter and pure maple syrup, this would also make a lovely dish for a weekend with friends.

Quinoa Parfait
This below breakfast in a cup also uses quinoa, though any grain such as spelt, black rice, brown rice, and barley would be great. My quinoa was cooked with ground cinnamon and nutmeg I then layered in a cup using left over coconut whip cream, raspberry, strawberry and banana with orange zest and nuts. Non  - dairy yogurt would make an excellent replacement to coconut whip cream.

And finally, the breakfast bowl with strawberries is topped with yogurt, mint, coconut butter, chopped pecans, orange zest and 1 tsp pure maple syrup.
